My hubby eats out frequently with his work obligations, and I’ve heard him several times singing the praises of fish tacos. Now for me, fish tacos just didn’t sound like something I would enjoy. As a child I grew up eating tacos regularly, and I loved them, but I can still remember when my mother decided to change things up and fixed them the way our neighbor did…with green PEAS in them…seriously… I liked my tacos the way they were supposed to be, not with green peas mixed in with the meat.
Anyway, so I guess you could say I’m kind of a “purist” when it comes to my tacos or burritos, and I don’t appreciate anything “strange, new or different” in them. But...after my hubby enjoying them so much, and seeing fish tacos so popular everywhere, and all the different ways people would serve them, I decided to relax and give them a try. 😛

I went the easy route, and picked up some baked fish sticks, since we don’t eat a lot of fried food, and my kids like them. You could just as easily substitute larger fillets or even fresh fish that you baked, but since this was new for me, I used the already prepared fish sticks.

- Fish fillets
- Tortillas
- Lime juice
- Cilantro
- Cheddar cheese
- Tomatoes
- Red onion
- Sour cream
- Lettuce
- Chipotle dressing
Optional ideals to try for different flavors:
- Pineapple chunks
- Salsa
- Shredded cabbage
- Tartar sauce
- Hot sauce
- My ranch dressing and taco sauce mixture
- Avocado
- Your favorite beans


Just get the fish in the oven, and cook it how you normally would, or if it’s from a package, follow the directions…just don’t over cook it.
While that’s baking, get your toppings ready, wash and chop up or tear apart the cilantro and lettuce (I like to buy my lettuce already shredded for convenience). Wash and chop up the onion and tomatoes, and lay out all your toppings buffet style so everyone can choose what they like.
Warm up your tortillas either in the microwave, stove top or oven, and/or use a tortilla warmer to keep them warm.
Then by the time your fish is done, everything is ready for each one to assemble their own fish tacos.
My preferred toppings were the fresh tomato, onion, lettuce, cilantro, sour cream, cheddar cheese and a few drops of lime juice…mmmm’mmmm.

I have to admit I was skeptical about fish tacos too, but have recently fell in love with them! These look yummy, I really need to make them at home!
