Happy Monday! I always look forward to the weekend of course, but I don’t mind Mondays so much either, because I’m a creature of habit, and tend to like my routine.
I did see the movie Inside Out with my children last week, and I have to say it was really interesting and thought provoking, even for adults. It’s a children’s movie about the emotions a little girl goes through after moving to a new place. Each emotion was a character, and they had to learn to work together, and it showed that none of them were unimportant. All in all, I thought it was very good, and it made me think about my own emotions, and which ones I let control me the most. Just so you know, there were a couple of bleeped words, and I think one near the end that wasn’t. It can definitely be a good resource if you’re wondering whether or not a movie is appropriate for your family.

Vegetable beef soup
Grocery list: Beef stew meat, onion, garlic, carrots, celery, potatoes, diced tomatoes, green beans, cabbage and beef broth
Fall is heading my way, and I look forward to lots of soups in the crockpot, fires in the fireplace, and hot cocoa on the porch!
Easy Oven Baked Ravioli
Grocery list: Frozen ravioli, Italian breadcrumbs, Parmesan cheese and eggs
I haven’t tried these yet, but my sister says they are amazing, even for lunch the day after you make them!
Easy Fish Tacos
Grocery list: Fish fillets, tortillas, Cheddar cheese, lettuce, tomato, Chipotle dressing, sour cream, lime juice, cilantro and salsa
Feel free to substitute your favorite mild white fish in this recipe, and there are so many optional ingredients to try with these, like pineapple, shredded cabbage, tartar sauce, hot sauce, avocados or beans, etc…
Turkey and provolone cheese sandwiches, strawberries, carrot sticks and baked fries
Don’t we all need a nice super easy meal to fix once in a while? You could always substitute ham or roast beef, and for the cheese, Cheddar, Monterrey Jack or Swiss slices. To make this completely no cooking, substitute a healthy baked chip for the french fries!
Chicken Noodle Casserole with your favorite vegetable
Grocery list: Chicken breasts, cream of chicken soup, spaghetti, breadcrumbs and milk
If you love chicken noodle soup, this is an even heartier, creamier recipe to try with lots more noodles!
Cheeseburger Cups
Grocery list: Ground beef, biscuits, Worcestershire sauce, ketchup, mustard, cheese and pickles
These amazingly taste just as delicious as a regular cheeseburger!
My dessert choice for the week is easy since my hubby is on a pumpkin kick! 🙂
This Moist Pumpkin Cake is perfect! It has a wonderful texture, and is lightly sweet with a hint of pumpkin pie!
