I know I’ve said it before, but I’ll say it again, I love “Taste of Home” cookbooks. This recipe came from their Busy Family Favorites cookbook. I modified it for my family a bit, and I will totally be making it again and again. It was so hearty and perfect for a cold winter evening.
INGREDIENTS:
- 8 ounces (usually half a box depending on size) of your favorite uncooked pasta
- 1 pound lean ground beef or turkey
- 1 teaspoon refrigerated jarred minced garlic
- 15 to 16 ounce jar of pasta sauce
- 14-1/2 ounce broth (chicken, vegetable or beef)
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach, chopped
- 1 1/2 cups grated mozzarella cheese
- salt and pepper to taste
Cook your pasta and drain.
Brown your ground beef and drain any fat, then add the garlic, pasta sauce, broth, Italian seasoning, and salt and pepper.
*Tip: I cook my beef or turkey ahead of time in bulk, and then freeze in meal size proportions. Then I just thaw it to use, and this makes dinner prep go more quickly on weeknights.
Bring to a simmer for 5 to 10 minutes till it thickens a bit. Stir in the spinach, and cook for a couple more minutes.
Add pasta and cheese to the meat mixture. Give it a couple of good stirs, (while still on the heat), and you are ready to serve.
We enjoyed this so much, and it makes great leftovers for lunch the next day!

Has anyone used frozen leaf spinach? Does it change anything?
I haven’t tried it, but I imagine it would be fine. Just probably thaw and drain it thoroughly, and then heat it through thoroughly. 🙂
Yuck to frozen spinach. Different texture. Unless it is all you have, give it a go for yourself.
