Sloppy joes are a fun, delicious, family friendly meal, but they tend to be scary messy, with all the meat and sauce dripping out of your bun. After making these scrumptious cheeseburger cups, I started thinking about what else I could bake up in a cute and easy little biscuit cup, and I decided sloppy joes would be perfect served in a biscuit.
There’s nothing fancy about this recipe, you can use the canned sauce like I do, to go with your choice of ground beef or turkey, or use your own favorite recipe. The only difference, is instead of putting the meat on a bun, you dish it into a tidy little biscuit cup… Although then technically they’re not “sloppy” anymore. 😛
Here is what you need to make these:
1 to 1 1/2 pounds ground beef or turkey, cooked thoroughly and drained
1 15 to 16 ounce can sloppy joe sauce (I like Hickory flavor)
1 can small or junior size biscuits (10 count)
You want to make sure you only use the smaller biscuits or you’ll have way to much dough, and not enough room for your meat. If all you have is the larger biscuits, you can slice them in half lengthwise, and just use a half biscuit for each cup.
Lightly grease your cupcake pan, and then press the biscuits into the bottom, and up the sides of each cup.
First, cook the ground beef thoroughly, remove from heat, and drain the fat off. Then mix in the sloppy joe sauce.
Using a measuring cup is the easiest way to fill the biscuits, with about a 1/4 cup of the mixture in each. Depending on how much meat you use, it makes around 10.
Bake for 20 minutes, in a preheated 375 degree oven, or until the biscuits are lightly golden. Let set for a few minutes to cool, then gently slipping a fork down underneath, between the pan and biscuits, is a simple way to lift them out of the muffin pan.
