I am constantly on a quest to get my children to eat their vegetables, and since you know I have at least one picky eater, it can be a challenge. This is a fun and colorful way to serve spinach and tomatoes that can make them a little more tempting, not only for kids, but also for guests, or for when you’re barbequing.

Here is what you need to make these:
Wooden or plastic skewers
Grape tomatoes, washed
Mozarella cheese block
Washed spinach leaves
Balsamic dressing

Depending on how many you want to make, cut up your cheese into bite size cubes (3 for each skewer), and you are ready to go.

Fold a couple of spinach leaves in half and start the layering.

I put my balsamic dressing in a .99 cent squeeze bottle (like you put ketchup or mustard in), and drizzled it over my salad skewers.

  1. Oh my, Margo! I love this idea! It would be great for a summer social or shower! I made some homemade French bread and did the same thing, with cheese, basil, and tomatoes. I just love the balsamic vinegar and oil! It is just gorgeous!
