Quick Italian Meatball Soup

Ingredients

  • 1 18 oz. bag of good quality frozen Italian meatballs
  • 1 14 oz. can of beef broth
  • 2 15 oz. cans Italian style stewed tomatoes
  • 1 16 oz. bag frozen stew vegetables potatoes, carrots, onions

Instructions

  • In a large pot, bring the meatballs, broth and tomatoes to a boil, then reduce heat and simmer for 10 minutes.
  • Add the vegetables, and cook for 10 more minutes on medium heat.
  • I wouldn’t hesitate to throw this together in the crock pot either. It’s warm and hearty, and if you like, top it with some Parmesan cheese and serve with a bread of your choosing.
