I may have mentioned this cookbook before, because I enjoy looking through it for some good ideas, when I need to get dinner on the table in a hurry. It’s called 1001 Community Recipes, and it has lots of easy tasty recipes! Recipes like this Italian Meatball Soup, which has only four ingredients, all of which can easily be stored in your freezer and pantry. Yay!
Add a hearty bread, some breadsticks or garlic toast, and you have a meal.
INGREDIENTS:
- 1 18oz. bag of good quality frozen Italian meatballs
- 1 14oz. can of beef broth
- 2 15oz. cans Italian style stewed tomatoes
- 1 16oz. bag frozen stew vegetables (potatoes, carrots, onions)
DIRECTIONS:
Bring the meatballs, broth and tomatoes to a boil, then reduce heat and simmer for 10 minutes.
Add the vegetables, and cook for 10 more minutes on medium heat.
That is all there is to it!
