Crockpot Beef and Sweet Potato Stew
Have some leftover pot roast and want to give it a different spin? Put it into the crockpot with some veggies and potatoes and you'll have delicious stew in no time!

Ingredients
- 1 1/2 pounds cooked beef roast
- 3 sweet potatoes
- 8 small red potatoes
- 1 red onion
- 1 28 ounce can of petite diced tomatoes
- 1 cup frozen green beans
- 2 Tablespoons Balsamic vinegar
- 1 Tablespoon Worcestershire sauce
- 2 teaspoons roasted garlic and herb seasoning
- 26 ounces beef stock I used unsalted
Instructions
- Wash, peel and cut up sweet potatoes in large bite size pieces, and wash and cut up red potatoes and put in crockpot.
- Peel and dice red onion and add.
- Pour in tomatoes and beef broth.
- Add green beans, beef (cut up in bite size pieces), seasoning, Worcestershire sauce and balsamic vinegar.
- Give it a stir, cover and cook on high for 4 to 6 hours or until potatoes are tender. Add salt and pepper to taste.
