Growing up, every Sunday we would have beef roast with potatoes, carrots, onions and celery. It would be cooking while we were at church, and we would come home to the yummy smell of lunch. I think for this reason, I have an affinity for beef roast.
These days, when I buy pretty much any kind of meat: roast, ground beef, turkey or chicken breasts, I cook up enough at one time for two or more meals and then freeze it, and this makes for quick meals on week nights. When I went to make this beef stew, I had some leftover cooked beef roast in the freezer, and lots of potatoes, sweet and red, and onions that I needed to use up. So I cut it all up, and put it in the crockpot with a few other ingredients to simmer all afternoon, and that’s how this delicious stew came about.
INGREDIENTS:
- 1 1/2 pounds cooked beef roast
- 3 sweet potatoes
- 8 small red potatoes
- 1 red onion
- 1 (28 ounce) can of petite diced tomatoes
- 1 cup frozen green beans
- 2 Tablespoons Balsamic vinegar
- 1 Tablespoon Worcestershire sauce
- 2 teaspoons roasted garlic and herb seasoning
- 26 ounces beef stock (I used unsalted)
Wash, peel and cut up sweet potatoes in large bite size pieces, and wash and cut up red potatoes and put in crockpot.
Peel and dice red onion and add.
Pour in tomatoes and beef broth. Add green beans, beef (cut up in bite size pieces), seasoning, Worcestershire sauce and balsamic vinegar.
Give it a stir, cover and cook on high for 6 hours. Add salt and pepper to taste.
This is the seasoning I used, but feel free to substitute your favorite beef seasoning or even Italian seasoning.
Crockpot Beef and Sweet Potato Stew

This was such a hearty, sweet and flavorful stew, and it went perfect with Oven Grilled Cheese Sandwiches.

This looks delicious!! quick question though, since you are cooking it for 6 hours, why are you using pre cook beef? couldn’t you just use raw stew meat or something else raw so that you would not have to pre cook?
