When I first got married, (almost 22 years ago) a close friend made this lasagna for my husband and myself. I was not a spinach lover at the time, and was so surprised to really like this lasagna, but I did, and I have made this recipe many many times in the last 2 decades.
Here is what you need:
Oven ready lasagna noodles ( you don’t have to precook them)
1 carton of cottage cheese (about 16 oz.)
1 10 oz. package of frozen chopped spinach, thaw and squeeze out moisture)
1 tsp. of oregano
1 large jar of your favorite pasta sauce
2 cups of mozzarella cheese
Mix cottage cheese, egg, spinach, and oregano. Spray 9×13 pan with cooking spray. Layer 1/3 of the pasta sauce, then lasagna noodles, 1/3 of spinach mixture, and 1/3 of the mozzarella cheese. Repeat this 2 times.
