Sometimes nothing satisfies like a fresh light crunchy salad, and I am always on the lookout for an easy no fuss variation on the usual “lettuce and tomato.”  We Are THAT Family (love that name) shared this salad on her blog, and it looked so simple and delicious that I tried it for a quick Sunday evening meal. My hubby’s words after eating it were “stupendous!” (I think he liked it)

I modified it a tiny bit to suit our family’s tastes, and here is what you need to make it:
2 cups cooked cubed chicken
16 ounce bag coleslaw
8 ounce bag shredded lettuce (I added this for mildness)
3.5 ounce bag roasted sliced almonds
3.5 ounce bag tortilla strips
Bottle of Asian dressing (I used about half a bottle of Orange ginger)

Mix all together in a large bowl.

Serve immediately.

This amount served three of us with a little leftover. It was light and crunchy and sweet.
I would also like to try this with a teriyaki dressing.

  9. This looks yummy and I will try this soon! not sure what tortilla strips are – certainly not something I could buy here in Australia, but I think I can adapt it to use fried noodles or omlette strips, which is what I thought they were until I read the recipe.
