Quick Italian Meatball Soup

I may have mentioned this cookbook before, because I enjoy looking through it for some good ideas for nights I might need to get dinner on the table in a hurry. It’s called 1001 Community Recipes, and the recipe for this soup has only four ingredients that can easily be stored in your freezer and pantry.

Add a hearty bread, some breadsticks or garlic toast, and you have a meal.
Here is what you need:
1 18oz. bag of good quality frozen Italian meatballs
1 14oz. can of beef broth
2 15oz. cans Italian style stewed tomatoes
1 16oz. bag frozen stew vegetables (potatoes, carrots, onions)

Bring the meatballs, broth and tomatoes to a boil, then reduce heat and simmer for 10 minutes.

Add the vegetables, and cook for 10 more minutes on medium heat.

That is all there is to it!

I wouldn’t hesitate to throw this together in the crock pot either. It’s warm and hearty, and if you like, top it with some Parmesan cheese and serve with a bread of your choosing.
