Do you like super fast, hearty and delicious dinners, that actually please and nourish your family? Of course you do; I do too!
Soups are most often one of those types of lunches and dinners.
I’ve shared my family’s favorite Chicken, Black Bean & Salsa Soup many times on my Monday’s menu plans, and it’s still one of our favorites which I use a lot when I have company, and it always gets rave reviews.
However, this Taco Soup has now joined it for top billing! It’s scrumptious and rich, and everyone in the family can customize it with toppings of their choice. Plus, it’s full of protein, has vitamins A & C, and iron and calcium. Sounds good, right!?
Now, I’m calling this 20 Minute Taco Soup, because I cook my ground beef ahead of time, package it in meal size portions in the freezer, so it’s ready to go on weeknights. Then I can throw this soup together super fast.
If you have to cook up your ground beef while you’re putting this soup together, it may take you a few minutes more. To save time though, you could have your beef cooking in a skillet, while you’re loading your soup pot with the other ingredients.
TACO SOUP
Ingredients:
- 1 pound ground beef, cooked and drained
- 2 cups chicken broth (I use low sodium)
- 1 package taco seasoning (around 1 ounce or 1 Tbsp) (I use low sodium)
- One 10 ounce can diced tomatoes and green chiles
- One 14 1/2 ounce can diced tomatoes
- One 16 can pinto beans, drained and rinsed
- One 15 1/2 ounce can red kidney beans, drained and rinsed
- One 15 1/2 ounce can black beans, drained and rinsed
- One 1 ounce package dry ranch dressing mix or 1/2 cup bottled ranch dressing
- 1 cup of corn (frozen or from a can, drained)
- Optional toppings: Corn chips, tortilla chips, cheddar cheese, sour cream, green onions, red onions,
Directions:
Step 1: Brown and drain your ground beef.
Step 2: Drain and rinse all your beans.
Step 3: Add all ingredients to your soup pot, stir and heat thoroughly over medium heat.
20 Minute Taco Soup

If there’s a particular type of beans you don’t like, just feel free to substitute it with one that you do like!
Serve in big soup bowls, and let everyone top with their favorite toppings.
