shepherd's pie, Hamburger Pie, Joyful Homemaking

This is a recipe my mom used to make for my brother and sister and I when we were kids. It’s yummy and hearty and  easy too.  It is one of a handful of dinners I made repeatedly for my husband when we were first married.

I think I knew how to make macaroni and cheese casserole, taco salad, pizza and stir fry, and that is what we lived on for a while. I remember being nervous the first time his parents came to visit because I thought he looked a little skinnier, and his mom would think I wasn’t feeding him well!    ANYWAY…..
Here is what you need for this quick and easy but tasty dish:

One pie crust
1 pound of cooked ground beef or turkey
2 cans of vegetarian vegetable soup
2 to 4 cups of mashed potatoes (either homemade or made up from flakes)
Cheddar Cheese to sprinkle on top

Mix together the  cooked hamburger and the 2 cans of soup (no water). Pour into the crust.

Then top with the mashed potatoes.

Bake for about 45 minutes in a 350 degree oven.

The last few minutes if you like you can sprinkle the top with cheddar cheese.

Doesn’t that look yummy!?  Sometimes the simplest ingredients make the yummiest recipes.

This does look yummy. Plus, I could make it so easily with vegetarian hamburger crumbles. Thanks for sharing. I will have to try it!

Could I use pillbury grands biscuts and flatten them and roll them into a pie crust?
