Chocolate Hazelnut Pie Cookies

Who doesn't love chocolate, or pie crust, or a creamy chocolate hazelnut spread?  So when I saw these combined in a simple cookie recipe at Pillsbury.com, I had to give it a try!

My family loved them! I made them two days in a row, and they were gobbled up!

Here is all you need:
1 thawed pie crust
1/3 to 1/2 cup chocolate hazelnut spread
1 egg
Fancy sugar crystals
Parchment paper

This is what I had on hand, but if you have Nutella, I'm sure that would be scrumptious too.
Thaw pie crust, and open on a floured surface.

Cut into strips about 1 1/2 inches wide, and then cut across the middle, except on the short side pieces.

Fold each piece softly in half lengthwise, just to leave an indentation, and then open back up.

Beat egg with fork, and then brush each piece lightly with egg wash.

I found that the easiest way to put a nice "clean" strip of spread down the middle is to put the chocolate spread in a baggie, and snip off the corner, and use it as a pastry bag to pipe on the spread (The first time, I used a knife, and it really made it messy).  Don't put it on too thick or too close to the edges, or you'll have a hard time sealing it.

Now fold each each piece over, and seal around all the edges with a fork. Then brush egg wash over each one.

Sprinkle each one generously with sugar crystals and place on baking sheet with parchment paper.

Bake in a preheated 400 degree oven for about 12 minutes till golden.

These would make a fun and different addition to a tea party, luncheon or cookie exchange!
