My mom teases me, because whenever one of us is having trouble coming up with an idea for a side dish for dinner, I usually end up saying, “Cornbread would be perfect!” I can’t help it though, I grew up eating cornbread and pinto (brown) beans, cornbread in milk, homemade corn-dogs and hush-puppies!

However, cornbread can be more than just a little ‘ole side dish.

If I ever buy my children corn-dogs, I only purchase the vegetarian ones, since I feel they are healthier than the deep fried, “who knows what’s in them hot dogs”  regular corn-dogs.  If you make your own, you can be choosier about which hot dogs you use. I’m not super picky about a lot of foods, but with hot dogs, I am. 😛
For this recipe, I found a vegetarian fed, uncured, all natural brand, and used them to make these delicious “corn-dogs” on a skewer meal, and it was perfect for a quick Sunday evening dinner.

, Cornbread Ideas, Joyful HomemakingI made up the  Simply Homemade® Cornbread batter, according to the package instructions, and baked it in mini muffin tins.  It made 24 fluffy, perfectly sized mini cornbread muffins.

Then I grilled up my hot dogs, and sliced them up in bite sized pieces, cut my mini muffins in half, and alternated the hot dogs and cornbread muffins on my skewers, which I had soaked in water to prevent them from burning up on the grill.

I laid them back on the grill for just a minute or two, so the cornbread could get a quick toast, and they were ready to serve.
