We’re in to April, and we got two inches of snow over the weekend. Everyone else seemed so surprised, but not me… I’ve been around long enough to remember snow flurries in May! 😛
For this week’s meal plan, I’ve added a couple of “breakfast for dinner” ideas. We have breakfast for dinner about once a week, whether it’s pancakes or eggs, or some sort of egg casserole or quiche. It adds variety and is usually cheaper than a regular dinner with meat. I hope you find some new meals to try for your family!
Chicken and Black Bean Nachos
Grocery list: Tortilla chips, cooked chicken breast or rotisserie chicken, black beans, Cheddar cheese, tomatoes, green onions, jalapenos, taco seasoning, salsa and sour cream
Tuna Pot Pie
Grocery list: Tuna, cream of chicken soup, peas, carrots and pie crusts
Coconut Quinoa Granola
Grocery list: Oats, quinoa, coconut, almonds, coconut oil, ginger, honey and cranraisins
Tuna Cornbread Cakes
Grocery list: Cornbread, milk, mayonnaise, green onions, eggs, parsley, Old Bay seasoning, Worcestershire sauce, tuna, butter and oil
Southwestern Black Bean Salad
Grocery list: Black beans, corn, orange pepper, onion, tomatoes, avocado, cilantro, garlic, olive oil, limes, cumin and chili powder
Lemon Poppy Seed Pancakes
Grocery list: Flour, sugar, baking powder, lemon peel, poppyseeds, milk, oil, eggs, lemon juice, butter, vanilla and cornstarch
My dessert choice for the week is this AMAZING Peach Dump Cake.
It starts with a cake mix, so it’s quick, but with the additions of peaches and pecans, it’s also a real treat!
