I love a good burrito, and because I’m the only cook at my house, we have them frequently. Now that I’ve learned how to make a quick and yummy burrito, I don’t eat them out at restaurants anymore because they seem too bland and tasteless to me.
Sometimes I use beef or sometimes chicken, but whichever I choose, mid-morning I put the meat in the crockpot on high and cook it till dinner time, and it’s always falling apart and perfect. I usually don’t even season the meat first, I just dump a 3lb. package of fresh ground meat or frozen chicken breasts in the crockpot , and I don’t have to touch it, or think about it till I’m ready to make dinner.
Not too pretty after it comes out of the crockpot, but I shred it and season it with taco seasoning (sometimes just salt) and here is what it looks like after.
After I season it, I usually microwave it with a little water in the bottom and a cover on top, to help rewarm it and spread the seasoning.
These are a few of my favorite things to make an awesome burrito. I usually have coupons for these taco kits, and so I stock up when they are on sale which makes for inexpensive tortillas, seasoning and taco sauce. I LOVE the Minute Maid Spanish rice, it tastes nothing like the spanish rice I have ever had which sometimes tastes like rice with tomato sauce added. This rice is so rich in flavor and goes great on a burrito.
I also really like Old El Paso’s Mexican rice. (No payment for endorsements here)
I like to sprinkle black beans or sometimes chili or kidney beans on our burritos, along with lettuce and tomato. Then my favorite part is either sour cream or a yummy mixture of ranch dressing and some of the taco sauce from my packet. The two combined make a DELICIOUS sauce.
Voila! A fantastically tasty burrito!
You know, I haven’t officially timed it, but I usually put it in about 10 or 11 in the morning and take it out around 5:30. That would be about 6 hours on high. That sounds long but that’s my crockpot and I like to make sure my meat is COOKED.
YUM! How long do you keep the chicken in the crock pot? I’d love to have prepared chicken for tacos and maybe freeze some for later use.

Never thought of using the crockpot for something like that, but it is ingenius! Now is the bag of chicken frozen when you put it in the crock in the a.m., or do you thaw them first??
I put the chicken breasts in frozen. The ground beef or turkey I put in thawed. It really is so convenient.
Ooh.. I’m gonna have to try this recipe!!
