Our trees are shedding leaves like crazy here in the northeast, and the peak of fall foliage has passed. To help me get over the loss of warm sunny days, I guess I need to remind myself of the fun of fires in the fireplace, hot cocoa, snuggling under a blanket on the couch, and the beauty of falling snow.
Since it’s Halloween here, I thought I’d show a couple of pictures from Halloweens’ past.
Breakfast Options:
(Any combination of the following)
French toast
Cereal
Fruit
Waffles
Toast
Eggs
Oatmeal
Poptarts
Egg whites and spinach (hubby’s choice)
Pancakes
Lunch Options:
(We like to add fruit and/or carrots to any of these “entrees”)
Pasta (My kids love it)

Macaroni and cheese
Vegetarian corn dogs
Vegetarian hamburgers
Hot dogs
Chicken, turkey or ham sandwiches
Graham crackers and milk
English muffins
Peanut butter and fluff sandwiches
Whole wheat toast
Soup
Yogurt or cheese sticks, crackers
Leftovers from dinner
Dinner:
Mexican Lasagna
Grocery List: Lasagna noodles, ground beef, refried beans, canned green chilis, taco seasoning,
salsa. cheddar cheese, sour cream, olives, green onions and tomato
Hamburgers
Grocery List: Hamburger, tomato, lettuce, strawberries, carrot sticks and potato smileys
Tuna and noodles (I use Tuna Helper sometimes, but here is a yummy looking recipe to try for tuna casserole)
Here is also a yummy looking recipe for tuna mac and cheese casserole that I want to try.
Grocery List: Tuna, tuna helper, green beans
Garlic chicken spaghetti with a salad and breadsticks is delicious.
Grocery List: Spaghetti, sundried tomatoes in water, chicken breasts, flour, olive oil, mushrooms, garlic, chicken broth, parsley, basil, red pepper flakes, parmesan cheese
Pesto Chicken Stromboli and raw veggies
Grocery List: Flour, yeast, oil, sugar, chicken, jarred pesto, mozzarella cheese and raw veggies
Chocolate chip pancakes, fruit and bacon (sometimes I add cut up banana to my pancake batter)
Grocery list: Pancake batter ingredients, chocolate chips, grapes, peaches and bacon

Margo, your meals look delicious. I’ve been known to use the “helper” meals too. It’s hard to pass them up when they are on sale and I have a coupon. I cook with ground chicken instead of beef and I buy it on sale too. It sure makes for a quick and inexpensive meal and even one my hubby can make if I need him too 🙂
