As a child, I remember my mom making something similar to these cookie bars, but I didn’t have a full fledged recipe. So I pieced together two separate recipes, and the result was just like I remembered those yummy bar cookies.
It’s three layers: the bottom which is like a giant oatmeal peanut butter cookie, then a layer of chocolate, and it’s topped with homemade peanut butter frosting. Yum!
INGREDIENTS:
- 1/2 cup butter (I use Smart Balance)
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup peanut butter
Mix together with mixer.
- 1 cup flour
- 1/2 cup quick cook oats
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Bake at 350 degrees for 20 to 25 minutes.
When you take out of the oven, sprinkle 1 cup of chocolate chips over the top.
After they start to melt, spread them over the top with a spatula.
While this cools and the chocolate hardens up, make the peanut butter frosting.
Peanut Butter Frosting:
- 1/2 cup plus 1 Tablespoon room temperature butter
- 1 cup creamy peanut butter
- 1/4 cup milk, add more if too thick
- 2 cups powdered sugar
Beat peanut butter and butter with mixer, then gradually add powdered sugar and milk alternately.
Beat well, till it is fluffy. If it is too thick, try adding a dab more milk.
Spread over the cooled chocolate layer.
Let them sit for a few minutes at least so everything “sets” and then you are ready to cut into bars and serve.
