Strawberry Banana “Ice Cream”

Ice cream is my all time favorite dessert. Never mind the fact that it aggravates my asthma and can be full of fat and calories!   Lately I have been trying to eat at least 5 fruits and vegetables every day to take better care of myself, and I was thrilled to find a most inspirational website with a whole fruit recipe for an ice cream alternative. This way, I can have my “ice cream” and get in a couple fruit servings!   Living a Changed Life has lots of encouragement and recipes to help live a healthier life, so be sure to check it out!
This recipe exceeded my expectations, and everyone in my family tried it and was not disappointed.

No Dairy Strawberry Banana IceCream

You can just use bananas alone, but there were some variation ideas, and so I added the strawberries too, yum!
Here is what you need:

2 bananas
3 strawberries
1 teaspoon vanilla
1 Tablespoon honey
1/4 to 1/2 cup milk or milk alternative (I used rice milk)
1/2 teaspoon of lemon or lime juice, optional (I added to keep the bananas fresher)

  • Prepare a tray and wash the strawberries.
  • Slice the strawberries and bananas, and spread them out on the tray. Freeze for at least several hours.
  • After they are frozen, add them all to a blender or food processor, along with the vanilla, milk, honey and juice. Blend and add more milk as necessary, mine was so thick that I ended up using almost a half a cup of rice milk.
  • When it’s thick and creamy, it’s ready to serve. I found that this amount makes 3 dessert cup servings or one large serving!

Ingredients

  • You may have to stop and stir the ingredients several times.

Frozen Fruit Strawberry Banana IceCream

It’s sweet, cold, fruity and thick, and a healthy enjoyable alternative to ice cream.

    This looks awesome and super simple. I’m going to try making it tonight. I’ve never used rice milk so I’m thinking I will try the Unsweetened Coconut Almond Milk. I think that would be amazing in it! Can’t wait to see what other recipes you have!!!
