One of my hubby’s favorite foods is avocado,
and we both enjoy a good grilled cheese,
so when I saw a scrumptious looking recipe combining
the two at Better Homes and Gardens,
I had to try it, with my own little spin.
Here is what you need:
(For 4 sandwiches)
8 slices sourdough bread
4 slices of Habanero Monterey Jack cheese
1 avocado
1 Tablespoon lemon juice
1/2 teaspoon cumin
1/4 teaspoon of salt
1 tomato
2 Tablespoons butter
This cheese is a big part of the deliciousness of this sandwich and gives it a bit of heat.
First, peel the avocado (I wash the outside first),
take the seed out and mash it up with a fork.
Add to it the lemon juice, cumin and salt.
Butter one side of the 8 bread slices.
Lay 4 slices buttered side down.
Top each with a slice of the cheese.
Spread each slice with 1/4 of the avocado mixture.
Slice the tomato and top each sandwich with a couple of slices.
Heat up your griddle or frying pan,
and cook for 3 or 4 minutes, flipping once, or until desired golden
“toastyness” is achieved, and the cheese is nicely melted. 🙂
These were a complete hit at my house, and definitely a new favorite!
I made some with already grilled chicken breast too, and they were delish!
