My mom has been making a dish like this scrumptious brunch casserole for years, and it’s a hit every time. It’s even perfect for dinner, and the leftovers heat up nicely for lunch.

INGREDIENTS:
- 6 eggs (beaten well)
- 6 slices of ham cut in bite size pieces
- 6 slices of bread cut in bite size pieces
- 2 cups of skim milk
- 1 cup sharp cheddar cheese (can use a little more if you like it cheesy)
- 1 teaspoon dried minced onion
- 1 teaspoon yellow mustard
- salt and pepper to taste (I go easy on the salt because the ham is usually so salty)
Beat eggs, and then add milk, mustard and onion. In a separate bowl, combine the ham, bread, cheese and salt and pepper, then spread it in a greased 9×13 casserole dish.

Pour the egg and milk mixture over the bread and ham cubes.

You can refrigerate for a few hours or overnight to let the eggs soak all through the bread, but even letting it sit for just a few minutes is recommended, to give the liquid a chance to absorb into the bread. Then bake in a 350 degree oven for 50 to 55 minutes.

It’s a tad crispy on the edges, and salty and cheesy and yummy everywhere else, so good!

Monday night’s breakfast night at our house– has been since our girls lived at home. (We’re empty nesters.) This would be an easy dinner served with fruit, canned or fresh.
For us, I’ll be omitting the ham and the salt and serving it with bacon or sausage prepared in the oven. Can’t wait to try this. Looks like a keeper!
