My hubby LOVES when I make his favorite banana bread. He praises it so profusely that it motivates me to make it often. 😛 Really there isn’t anything special in the ingredients, but the one thing I do that seems to make it have a really nice consistency, is to blend all the wet ingredients, including the bananas, very well in my blender before mixing them in with the dry ingredients. The recipe is adapted from the Better Homes and Gardens New Cookbook. I always double or triple it!
INGREDIENTS:
- 3 ripe bananas
- 1 egg
- 1/4 c oil
- 3/4 c whole wheat flour
- 3/4 c white unbleached flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. cinnamon
- 3/4 c sugar ( I like to use a little less)
- Pinch of salt
DIRECTIONS:
Bake at 350 degrees for 50 minutes. Makes one loaf. My mom and dad like it with chopped up walnuts, but since my kids don’t like nuts, I usually leave them out.
It is scrumptious plain or with butter smeared all over it!

- Pour into a greased loaf pan, and bake in a preheated 350 degree oven for 50 minutes.
