Don’t you LOVE a good easy dinner recipe, that EVERYONE in your family will eat!? I sure do! This super easy Crockpot BBQ Chicken Thighs dinner recipe is just one of those recipes!
It’s so simple that I can hardly call it a recipe. But I enjoy making it because it reminds me of my sister, since she shared the recipe, and because I know it’s something my picky eaters will eat without complaining!
Ingredients:
- 6- 9 fresh Chicken thighs ( I use boneless, skinless, but it doesn’t matter)
- One bottle (around 17 ounces) of BBQ sauce (whatever is your favorite)
- A pinch of salt and pepper
- Cooking spray
- Optional: Two 15 ounce cans pinto beans (added during last hour of cooking)
Directions:
Step 1: Spray your crockpot with cooking spray, so the chicken thighs won’t stick. Then lay the chicken thighs in the crockpot, and sprinkle with salt and pepper. Pour your BBQ sauce over the thighs to cover them.
Step 2: Cook for 4 hours on high (depending on your particular crockpot, and how hot it runs), and the internal temperature of chicken reaches 165 degrees. The chicken is falling apart tender when it’s done.
Step 3: If you’d like, during the last hour of cooking, add 2 cans of pinto beans.
Step 4: Chicken thighs are great for this recipe because they are so nice and moist, compared to chicken breasts, which can sometimes get too dry.
It does get “liquidy” as it cooks, but as it cools a little, it thickens up a bit!
