Ok, so I’ve seen recipes for pumpkin chili all over recently, and it intrigued me since I had never tried it before. So this past Sunday, I decided to try making it in the crockpot, since on Sunday, the most convenient lunch tends to be something that can go in the crockpot before church, or we end up eating hot dogs because we’re starving when we get home, and aren’t patient enough to wait for much else.

We were pleasantly surprised at how delicious, rich, sweet and spicy it turned out, and I served it with hush puppies as a side.

INGREDIENTS:

  • 2 pounds browned ground beef
  • 1 Tablespoon dried minced onion
  • 2 16oz cans chili beans, no draining

  • 1 cup pumpkin puree
  • 1 14.5oz can beef broth
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon chili powder

After your beef is browned and drained, pour everything in the crockpot, and stir well. I cooked mine on high for about 3-4 hours.

Crockpot temperatures can vary so use your own judgement. Isn’t that easy?!
I whipped up some hush puppies to serve with it, and it was the perfect complement.

Serve it plain or with your favorite chili toppings.

  5. MMMM this recipe is so good! I featured this recipe [http://undertheoaksblog.com/2013/10/12/have-a-chili-week/#more-3514] on a blog that I co-author, with just a few modifications. The taste has that sweet/salty combo. Instead of hush puppies I paired it with a no sugar, low carb zucchini bread. Fall vegetables are surely my favorite!
