Hey there! Hope all you mothers had a wonderful Mother’s Day! I know I sure did. My family made me feel so loved, and I was able to spend the day with my mom, which was very special. Being a mother has been an amazing growing experience, harder than I ever thought, but a job that I would never trade.
A huge part of being a mom is feeding those hungry mouths each and every day, and so here are some dinner ideas for this new week.
Now I know that beans aren’t usually a kids first choice for dinner, but I grew up eating them with cornbread, some of the “juice” from the water the beans cooked in, and a little ketchup on top. My dad likes them with onions and relish. We think they’re just about as good as a tender steak… Mmmmmm Mmmmmm. Don’t be afraid to give them a try!


Grocery list: Bow tie pasta, olive oil, pesto, Italian dressing, chicken, fresh spinach, cherry tomatoes and feta cheese

Grocery list: Ground beef, red, green & yellow peppers, onion, Italian dressing, Italian bread & provolone cheese
Cabbage Roll Casserole
Grocery list: Cabbage, ground beef, Italian dressing, onion, instant rice, tomato soup and pasta sauce
This is hands down the soup I make most often, which everyone loves, AND it’s an absolute cinch to make! If you use canned chicken breast, you can keep all the canned ingredients on hand in your pantry!
Chicken, Black Bean & Salsa Soup
Grocery list: Chicken, black beans, salsa, chicken broth, corn and rice

Grocery list: Beef roast, sweet potatoes, red potatoes, onion, canned tomatoes, green beans, Balsamic vinegar, Worcestershire sauce, garlic and herb seasoning and beef stock
My dessert choice for the week is Funfetti Doughnuts!
