One of our top 5 favorite meals around our house is turkey meatloaf. Now, I love me a big juicy cheeseburger, and ground beef in my spaghetti sauce, but for meatloaf, for some reason I prefer ground turkey. The other night I doubled my meatloaf recipe because my two big guys gobble it up like candy, and I wanted to make sure to have some leftovers.
So after enjoying our meatloaf dinner, I protected the leftovers till I could make a couple of different things with them. Mrs Happy Homemaker had a divine looking meatloaf grilled cheese sandwich that I knew I had to give a try,
and my husband loved it. I just grilled it up with butter, and a couple of slices of cheese till it was toasty, and served it with some leftover pasta sauce, but you could use marinara.
I also used some of the leftover meatloaf, and some additional meatballs, to make some cute biscuit stuffed nibblers that Menu Musings of a Modern American Mom showed on her blog, and just looked irresistible.
Let me tell you, they were! They’re so simple to make, especially if you use leftovers (meatloaf or meatballs). If you use frozen fully cooked meatballs, make sure you thaw and warm them up (you can use the microwave) first.
Use a can of your favorite biscuits, but not the giant supersize ones. Slice each biscuit in half through the middle so they won’t be quite as thick.
Cut your meatloaf into chunks, and if you like, your meatballs in half so they won’t be so big, although I left most of them whole.
Then stretch your biscuit halves out a bit, add your meatloaf or meatball and cheese, and wrap the biscuit around it all. The creator of these yummy mouthfuls used cut up string cheese, which would work much more easily, but I used what I had on hand, which was shredded mozzarella.
Put them on a lightly greased baking sheet, and brush them with melted butter (or I used cooking spray), and then sprinkle them with garlic salt and Parmesan cheese, or if you like, Italian seasonings, and bake in a preheated 375 degree oven till they’re golden.

You can serve with marinara or pasta sauce, and they would make nice little appetizers!
Oooh, stuffed biscuits sound good! They kind of remind me of something we ate when I lived in Hawaii. It was called Manapua, and was basically steamed rolls stuffed with char siu pork. I bet my family would love this recipe even more!

I love the idea of the stuffed meatballs in biscuits. We actually had meatloaf tonight and we had leftovers. Great idea.
Wow, what a great idea! I think my son would love to have those in his lunch. I bet we could even keep them in the freezer.
