Happy Monday! We’ve had a few unseasonably warm days here, and all of our snow is melted, much to the disappointment of my two youngest kiddos! Personally I don’t mind a bit, since 50 degree weather is just about perfect in my mind, especially compared to 5 degrees, which it was on last Monday!
A new week is another opportunity for feeding our families some nutritious and delicious heart warming food, so I have 10 very family friendly casseroles this week to give you some options for dinnertime!
Casseroles have been a long time staple of family dinner times! They can be a wonderful way to use up leftover meats, grains, dairy or veggies, without letting them go to waste, and they are efficient at combining several nutritious food groups in each bite. Also, many times they are big enough to feed a crowd, which makes them ideal for when you’re having guests. They frequently work well when freezing too, so you can save some meals for those days when there is no time for food prep!

I love casseroles! I wish my kids weren’t SO picky!
I can relate, I have one kid who won’t eat anything with cheese in it, so I usually put a serving for him in a small casserole dish before I add the cheese to any casserole! 😛
