Southwestern Chicken Salad

We enjoy a hearty salad with some protein, and this chicken salad with a southwestern flare fits the bill.  It’s full of color and flavor, and can be easily tailored to suit your personal tastes.

Southwestern Salad with Chicken

Here is what you need to make this filling salad:

  • Romaine lettuce
  • Tomatoes
  • Corn
  • Black beans
  • Cheddar, Monterey Jack or Colby  cheese, shredded
  • Cooked diced chicken breast
  • Hard-boiled eggs
  • Dressing of choice
  • Options: Chopped cilantro, sliced avocado, chopped red onion, diced jalapeno,
    diced green pepper, crumbled tortilla chips, corn chips or tortilla strips

Southwestern Salad with Chicken

Wash, drain and chop your romaine lettuce and tomatoes.

Drain and rinse the black beans, and drain the corn if using canned corn.

Toss everything, and add any optional ingredients that you like, and you’re ready for the dressing.

There are many zesty dressings available that would work well with this salad
(like a Catalina or a vinaigrette based one),

but personally I like to mix barbeque sauce with ranch dressing as a topping.

    Your salad looks great! After a weekend of travel and lots of eating out, my husband and I were craving a big salad last night too, and it was so refreshing to have a fresh, light dinner! Your salad looks wonderful!!!
