We enjoy a hearty salad with some protein, and this chicken salad with a southwestern flare fits the bill.  It’s full of color and flavor, and can be easily tailored to suit your personal tastes.

Here is what you need to make this filling salad:

  • Romaine lettuce
  • Tomatoes
  • Corn
  • Black beans
  • Cheddar, Monterey Jack or Colby  cheese, shredded
  • Cooked diced chicken breast
  • Hard-boiled eggs
  • Dressing of choice
  • Options: Chopped cilantro, sliced avocado, chopped red onion, diced jalapeno,
    diced green pepper, crumbled tortilla chips, corn chips or tortilla strips

Wash, drain and chop your romaine lettuce and tomatoes.

Drain and rinse the black beans, and drain the corn if using canned corn.

Toss everything, and add any optional ingredients that you like, and you’re ready for the dressing.

There are many zesty dressings available that would work well with this salad
(like a Catalina or a vinaigrette based one),

but personally I like to mix barbeque sauce with ranch dressing as a topping.

Easy Southwestern Chicken Salad

Delicious healthy salad idea for lunch or dinner!

Ingredients

  • Romaine lettuce
  • Tomatoes
  • Corn
  • Black beans
