I am calling these cookies “breakfast cookies” because I think they are healthier than your average cookie, enough to have for breakfast once in a while.

I adapted these from a lunch box cookie recipe in Kid Favorites Made Healthy.
Here is what you need:
- 1/2 cup butter (I like Smart Balance)
- 1/2 cup peanut butter
- 1/3 cup sugar
- 1/3 cup packed down brown sugar
- 1/2 teaspoon baking soda
- 1 large or extra large egg
- 1/2 teaspoon vanilla
- 1 cup flour (if you want to make it even healthier, I bet you could substitute
whole wheat pastry flour) - 1 cup quick rolled oats

Cream butter and peanut butter with mixer, then add sugars and baking soda. Add egg and vanilla. Stir in flour and oats.

Spoon a rounded teaspoonful about 2 inches apart on cookie sheet. I gave mine a quick spray with vegetable oil even though the original recipe says ungreased. Bake for about 8 minutes in a preheated 375 degree oven.
Makes about 2 1/2 to 3 dozen.

I have been wanting to try these. I think they’d be “healthy”, too, and somewhat filling. I mean, really, we eat donuts, coffee cake, cinnamon rolls for for breakfast. Why not something with peanut butter and oats.
