, Crunchy and Chewy Cinnamon Stick Cookies, Joyful Homemaking

I posted this recipe in May, but it is much more fitting for this time of year. It makes a great addition to holiday baking and all the yummy warm drinks that the cooler weather (for some) brings.  I found this recipe years ago in Good Housekeeping Magazine (December 2005) from a reader who had received it 40 years earlier. My mother, sister and I  made it along with our other Christmas cookies a few years ago, and it was an instant favorite.

These cinnamon sticks go PERFECT with a cup of coffee or a mug of milk.

This recipe makes about 100 cinnamon sticks:

  • 3 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
    Sift together these dry ingredients separately.
    Then in a mixing bowl blend:
  • 1 cup soft butter
  • 1 cup sugar
  • 1 cup brown sugar packed
  • 2 eggs
    Beat till creamy, then add the dry ingredients slowly.
    Then stir in:
  • 1 cup finely chopped pecans or walnuts

Line a bread pan with plastic wrap (I ran out, so I used foil).
Pour your dough into the bread pan and pat it down. Chill for several hours.
After it gets chilled and firm, put it out onto a cutting board and remove wrap.
Slice crosswise in 1/4 inch slices and then slice those in 1/4 inch sticks and place on greased cookie sheet 1 inch apart (These do spread).

Bake at 325 degrees for 12-13 minutes or till lightly browned.

These are absolutely delicious plain, or you can drizzle them with a powdered sugar frosting or a store bought vanilla frosting (warmed up to drizzle).

Crunchy and Chewy Cinnamon Stick Cookies

Chewy cinnamon stick cookies are a delightful treat that pairs perfectly with a cup of coffee. These cookies are similar to biscotti, but with a slightly softer texture that makes them perfect for dunking. The cinnamon flavor is warm and comforting, making these cookies a great choice for a cozy afternoon snack.
