I got the inspiration for this from a book called Quick Meal Solutions which I checked out from our local library. It is full of ways to make meals, snacks and desserts easier for busy lifestyles. I changed up the recipe while keeping the basic premise.
INGREDIENTS:
- 7.5 ounce can of small biscuits (10 to a can)
- 20 ounce can of apple pie fillingStreusel topping:
- 1/2 cup brown sugar
- 1/2 cup flour
- 1/2 cup chopped pecans
- 1/4 cup butter
- 1/8 tsp salt
- 1 tsp. cinnamon
The tiny biscuits work best, but if you can only find larger ones, cut them in half”sideways,” so they won’t be so large that they push the filling out when they bake.
Then pat them down in your muffin tin, and up the sides as much as you can, so it will hold the filling.
(I did give my pan a quick spray of vegetable oil, just to ensure easy removal).
Then put a large spoonful (about 2 Tablespoons) of apple pie filling in each one.
Make up the streusel topping, and sprinkle on each little pie.
Bake for 15 to 25 minutes at 350 degrees, till the biscuit crust is golden. The wide range in baking time is because I’ve made these in metal pans, and in silicone on top of a cookie sheet, and the time various quite a bit.
Serve as is or with a scoop of vanilla icecream!
They’re delicious warm or cold.

I’ve got a very similar recipe that’s upside down – you start with a little brown sugar, butter, and sliced apple and then put the biscuit on top. When it’s done baking you invert and it’s like a mini apple tatin. SO simple…
