Soups can make a hearty, family friendly and easy dinner, and this lasagna soup is made of simple ingredients that I usually have on hand, and as a wonderful bonus, it’s scrumptious too!
INGREDIENTS:
- 1 28 ounce can of petite diced tomatoes with garlic and olive oil
- 1 pound of ground beef, cooked and drained
- 15 ounces of your favorite pasta sauce (I love Prego Traditional)
- 1 teaspoon of Italian blend seasoning
- 2 cups of beef broth
- 1 cup of water
- 2 1/2 cups of cooked pasta (I like the Cellentani shape)
- Parmesan cheese
- Mozzarella or Provolone cheese
- First, brown your ground beef and drain. (I usually cook my ground beef ahead of time in bulk, in the crockpot, so I just thaw it, and add it to the sauce).
- Then add the key ingredient, canned diced tomatoes which are in garlic and olive oil, then the pasta sauce (my favorite is Prego), the Italian seasoning, broth and water.
- Let it simmer while you cook the pasta.
- After your pasta is cooked and your soup base has simmered for about 15 to 20 minutes, add the cooked pasta and stir gently.
When you’re ready to serve,
top with Parmesan cheese and/or mozzarella cheese.

I would absolutely make this in the crock pot, and just add the cooked noodles at the end just long enough to heat through. 🙂
