Big juicy burgers are my favorite item to order when we eat out, but you know what my second favorite thing to order is???  Chicken Quesadillas!!!   However, I’ve recently been making them at home a bunch, and now I think mine taste just as good (or better) than any I’ve ordered at a restaurant.

Quesadillas are one of those extremely versatile dinner ideas that can be made up to taste completely different by what you put in your tortillas.  If you’re not familiar with quesadillas, they’re tortillas stuffed with delicious ingredients like meats, beans, vegetables and cheeses, and then toasted to a crunchy golden perfection.

I’ve seen them created with lots of different themes:  pepperoni pizza, Reuben sandwiches, cheeseburgers etc… You’re only limited by your imagination!

My favorite way that I’ve made them 3 times in the last week is with chicken AND bacon!  They’ve gotten rave reviews from my family.  🙂

If you keep baked chicken breasts and precooked bacon on hand like I do, you can have a scrumptious dinner on the table in around 10 minutes.  Rotisserie chicken also works wonderfully.

INGREDIENTS:

  • Tortillas
  • Cooked chicken breasts
  • Cooked bacon
  • Monterey Jack cheese
  • Optional:  Tomatoes, lettuce, sour cream, salsa, limes and onions

Heat up a non-stick pan over medium low heat, and if you like, melt a little butter to coat the outside of the tortillas, or spray your pan with cooking spray.

Lay one tortilla in your pan and add your cheese, chicken and bacon, and any other desired ingredients.  Lay another tortilla on top of ingredients.  Then I like to put a lid on the pan to help hold in the heat, and get the cheese nice and melted, so everything kind of sticks together with the cheese.  When the bottom tortilla starts to get golden and crispy, gently flip with a large pancake turner/spatula, and cook till the other side gets golden and crispy.  It should only take 3 to 4 minutes depending on how hot your pan is.

Lay the cooked quesadilla out on a plate or cutting board, and cut into triangles.  I use my handy dandy kitchen scissors.  🙂
