About a month ago my family and I ate at a local restaurant, and I chose an egg sandwich.  Not just any old egg sandwich, but one with sundried tomato mayonnaise! Now if you are a regular reader of my blog, you know I love sundried tomatoes, so that just sealed the deal for me, and it was so yummy, I had to recreate it at home!

This is an absolute new favorite…crunchy, tangy, salty, slightly sweet and then the egg, the glorious egg! It makes my mouth water just thinking about it!

Once you have all the ingredients on hand, it makes for a quick dinner… or breakfast…or lunch…or snack…

Since I wasn’t able to find sundried tomato mayo at the grocery (they must make it somewhere), I grabbed a jar of sundried tomato pesto, which ended up being even more flavorful.

I mixed 1 Tablespoon of the sundried tomato pesto and 1/4 cup of mayonnaise, this is enough for two sandwiches.

Then I gathered the rest of my ingredients and started layering.

I used a hearty whole grain bread and toasted it, then smothered it with the sundried tomato mayonnaise.

Next, came a handful of fresh spinach,

and then a couple of slices of fresh tomato.

Top with the other slice of bread, cut in half and enjoy!

Better than restaurant quality taste for sure!

Sundried Tomato Mayo Bacon & Egg Sandwich

Sundried tomato pesto is a great choice for adding some depth and flavor to sandwiches! Spinach and tomato are also excellent choices, as they add some fresh and healthy elements to your meal. This sandwich is especially delicious

Ingredients

  • 1 Tablespoon sundried tomato pesto
  • 1/4 cup mayonnaise
  • 4 slices hearty whole grain bread
  • 6 slices cooked bacon
  • 4 cooked eggs
  • 1 cup fresh spinach
  • 1 to mato

Instructions

  • Mix together the sundried tomato pesto and mayonnaise.
  • Toast the bread, and spread each slice with 1/4 of the spread.
  • Layer on the bacon, spinach, tomato and egg.
  • Top with the other slices of bread.
  • Cut in half and serve.
