I’ve always loved breakfast for dinner. For one thing, a large breakfast in the early morning is not appealing, and yet there are so many delicious “breakfast foods.” Having breakfast for dinner can also be money saving, depending on what you make of course. Adding bacon or ham can make breakfast for dinner a little more hearty, but for this post I decided to share meatless or vegetarian options (not vegan), since we’re trying to cut back a little on our meat consumption.
Pancakes are super inexpensive to make, and there are so many variations to change up the flavor. Blueberries, strawberries, bananas or chocolate chips are all delicious options, and here are a few more:
Lemon poppy seed pancakes with a scrumptious lemon sauce!

Eggs are an option I use a lot at dinner time, and there are probably a hundred different ways to make them!
Scrambled Eggs

Quiche and Banana bread (use all veggies in quiche)
There are lots of “carb rich” delcious ideas too!
Strawberry Banana French Toast
Baked Oatmeal with Cranberries
Toasted peanut butter and banana sandwich
Meatless meals don’t have to be tasteless or boring, especially when choosing breakfast for dinner!
