Happy Monday! I hope you had a nice Easter weekend! It went very quickly for me, but I enjoyed a nice weekend as the weather was beautiful, Spring was in the air, we had a beautiful Easter service at church, and a wonderful dinner at my sister’s house! The meal was easy to put together since we shared in the cooking and had both put our crockpots to work while we were at church! She made a ham in one, a hashbrown potato casserole in another, and I threw together a green bean casserole in mine. I purchased ready made rolls and cupcakes from the grocery, and we called it a meal! Not a lot of work or hassle, and yet it was delicious and ready when we got home from church!
For this week’s menu, I add some recipes to use up any leftover ham you might have!
Baked Chicken & Spinach Egg Rolls
Grocery list: Egg roll wraps, chicken, black beans, spinach, corn, green chilies, green onions and cilantro
Ham and cheese sliders and raw veggies
Grocery list: Dinner rolls, ham, swiss cheese, mustard, poppy seeds, worcestershire sauce and veggies
Grocery list: Canned navy bean, ham, onion and cornbread ingredients
A fruit tray would go wonderfully with the egg casserole or the soup!
Grocery list: Eggs, ham, bread, milk, cheese, onion and mustard
Baked French Toast with Caramel Glaze
Grocery list: Italian bread, eggs, milk, cinnamon, vanilla, brown sugar, butter, pecans and powdered sugar
Grocery list: Pasta, diced tomatoes, ground beef, pasta sauce, Italian seasoning, beef broth, Parmesan and Mozzarella cheese
My dessert choice for the week, is this easy and light 2 Ingredient Apple Angel Food Cake!
