Menu for the Week of July 21st
Happy Monday! As I sit here on my “big comfy” couch with my “big comfy” cup of coffee, I can hear birds chirping outside my living room window, and it’s such a cheerful sound to listen to while the house is quiet and the sun is slowly coming up. I’m not always the first one up at my house, but I truly enjoy the peace and calm when I am.
Sometimes, it’s easy to fall into a rut with side dishes…mashed potatoes, rice, a nuked veggie, or my stand by, cornbread (kind of a running joke in my family), and those are tasty too, but there are lots more options as well:
-Green bean casserole
–Cabbage and noodles
-Sweet potatoes or sweet potato fries
-Macaroni and cheese
–Mashed butternut squash

Egg whites and spinach (hubby’s choice)
Baked eggs and cheese casserole
Toasted peanut butter & banana sandwich
Coconut Quinoa Granola
(We like to add fruit and/or carrots to any of these “entrees”)
Pasta (my kids love it)
Macaroni and cheese
Vegetarian corn dogs
Chicken, turkey or ham sandwiches
Graham crackers and milk
Peanut butter and fluff sandwiches
Whole wheat toast
Yogurt or cheese sticks, crackers
Meatless “meatballs”, pasta and broccoli
Grocery list: Eggs, onion soup mix, cheddar cheese, walnuts, bread crumbs, vegetable broth, pasta sauce, spaghetti and broccoli
Turkey, peas and roasted white and sweet potatoes
Grocery list: Turkey breast, frozen peas, 2 white potatoes, 2 sweet potatoes, olive oil, onion soup mix
Wendys Copycat Berry Almond Chicken Salad
Grocery list: Mixed greens, strawberries, blueberries, Asiago cheese, sliced almonds, grilled chicken breast, raspberry vinaigrette
Rotisserie chicken nachos
Grocery list: Tortilla chips, rotisserie chicken, black beans, Cheddar cheese, tomatoes, green onions, jalapenos, taco seasoning, salsa, sour cream, lettuce
Chicken salad sandwiches, red pepper strips and mandarin oranges
Grocery list: Bread or buns, chicken, mayonnaise OR ranch dressing, pickles, red peppers and fruit
