Menu for the Week of July 21st

Happy Monday! As I sit here on my "big comfy" couch with my "big comfy" cup of coffee, I can hear birds chirping outside my living room window, and it's such a cheerful sound to listen to while the house is quiet and the sun is slowly coming up. I'm not always the first one up at my house, but I truly enjoy the peace and calm when I am.

Sometimes, it's easy to fall into a rut with side dishes...mashed potatoes, rice, a nuked veggie, or my stand by, cornbread (kind of a running joke in my family), and those are tasty too, but there are lots more options as well:
-Potato salads
-Vegetable salads
-Fruit salads
-Applesauce
-Coleslaw
-Green bean casserole
-Hashbrown casserole
-Baked beans
-Cabbage and noodles
-Deviled eggs
-Sweet potatoes or sweet potato fries
-Macaroni and cheese
-Bruschetta
-Raw veggies
-Mashed butternut squash
-Grilled vegetables
Here are a couple of my favorites when I'm not in a crazy hurry:

Or these slightly crunchy "oniony" roasted sweet and white potatoes:
