Grilled Cheese Breakfast Sandwich

I have to say right up front, that this amazing grilled cheese “breakfast” sandwich certainly is not just for breakfast! I’m calling it that because it has bacon and eggs in it, but it’s awesome for dinner, lunch, and snack-time as well, and it’s a cinch to put together, especially if you buy the pre-cooked bacon as I often do, to save time and the mess.

INGREDIENTS:

  • 2 slices of your favorite bread
  • Sharp Cheddar or Colby Jack cheese slices
  • 2 eggs, microwaved, fried or cooked omelet style
  • 2-3 pieces cooked bacon
  • Butter

DIRECTIONS:
First, cook your bacon. I often buy the pre-cooked bacon, so I can just warm it up in the microwave, and blot it with a paper towel. Then you can either cook your eggs in the microwave with one of these handy gadgets,

fry them in a skillet, or stir them together and cook them omelet style, which I’ve been doing lately because the shape covers the bread nicely.

Then you’re ready to assemble your sandwich for its final toasting. Spread one side each of two slices of bread with butter, and then layer on your cheese, bacon and eggs (with the buttered sides of the bread facing out), and toast over medium heat in your frying pan or panini grill, flipping as necessary till your cheese is all gooey and melted, and the sandwich is nicely toasted on both sides.

  1. I want this entire page of sandwiches! Looks so good! I don’t know why it has never occurred to me to grill my bacon, egg & cheese sandwich…but I will be doing that next time.
