Happy New Week! I spent some time this weekend brushing up on my Algebra skills, helping my son, who is a junior, with his homework. I’ve forgotten so much, but the internet is so full of help and information, thank goodness! He is going to a Christian school for the first time this year, and I am still homeschooling my two younger ones.
Meal planning makes my day so much smoother, by knowing what I am going to fix for dinner ahead of time, and having all the ingredients on hand. I’d like to try to add more meatless meals to my rotation, and this week I have added a Vegetable Tart which turned out so yummy!
Breakfast Options:
(Any combination of the following)
French toast
Cereal
Fruit
Waffles
Toast
Eggs
Oatmeal
Poptarts
Egg whites and spinach (hubby’s choice)
Pancakes
English muffins
Muffins
Baked oatmeal
Breakfast cookies
Quiche
Cinnamon rolls
Lunch Options:
(We like to add fruit and/or carrots to any of these “entrees”)
Pasta (my kids love it)
Ravioli
Macaroni and cheese
Vegetarian corn dogs
Vegetarian hamburgers
Hot dogs
Chicken, turkey or ham sandwiches
Graham crackers and milk
English muffins
Peanut butter and fluff sandwiches
Whole wheat toast
Soup
Yogurt or cheese sticks, crackers
Leftovers from dinner
Dinner:
Lasagna soup and breadsticks
Grocery list: Canned tomatoes, ground beef, pasta, beef broth, pasta sauce, Italian seasoning and breadsticks
Summer Vegetable Tart
Grocery list: Frozen puff pastry, fresh corn (I used frozen), zucchini, cherry tomatoes, mozzarella and pesto
Big Mac Pizza
Grocery list: Pizza crust, olive oil, thousand island dressing, American cheese (I skip this), ground beef, cheddar cheese, tomatoes and lettuce
Grocery list: Turkey burgers, buns, carrots, spinach and baked beans

Yum! These all look delicious! I love having a week of meals planned out. I have never planned breakfast and lunch though. It would definitely help cut down on trying to figure out what we’re going to eat. I’m going to try out some of your recipes!
