Happy New Year! Do you make resolutions for each new year? I used to, but I think I got tired of letting myself down, so I don’t bother anymore with writing down “formal” resolutions. Although the Christmas holiday does seem to be a time of reflection for my husband and myself, and we did talk about some things we’d like to improve this year.
After all the cooking and baking of the last few weeks, I picked some super easy, simple, and quick dinner ideas for this week, and they are all delicious and family-friendly! Using rotisserie chicken from the grocery and just taking it off the bone at home, and browning ground beef in bulk, and storing it in meal size portions in the freezer, make many meals as fast as “fast food,” but usually a whole lot more nutritious!
Chicken Nachos
Grocery list: Cooked chicken breasts or rotisserie chicken, tortilla chips, Cheddar cheese, black beans, tomatoes, green onions, taco seasoning, salsa and sour cream
Mini Turkey Meatball Vegetable Soup
Grocery list: Turkey or chicken meatballs, chicken broth, onion, celery, carrots, canned tomatoes, fresh spinach and seasonings
Grocery list: Canned chili, corn chips, lettuce, tomato, sour cream and Cheddar cheese
Creamy crock pot potato soup and raw veggies
Grocery list: Hashbrown potatoes, chicken broth, cream of chicken soup,
onion, cream cheese, Cheddar cheese and raw veggies
Meatball subs and raw veggies
Grocery list: Buns, meatballs, provolone cheese, pasta sauce and raw veggies
Pizza Grilled Cheese
Grocery list: Italian bread, pepperoni, Mozzarella slices, butter and pasta sauce for dipping
My dessert choice for this week is these delicious Flourless Peanut Butter and Chocolate Chip Cookies.
They are so perfect, that you’d never know there was no flour in them!
