Happy Monday! Hope this new week brings you joy.
A few of us got too much sun this week, 😛 even though we were covered in a high SPF sunscreen, and after that experience, I learned that it’s good to check the expiration dates on your sunscreen, and also that leaving it in high heat (like in a car) can decrease its potency. So, it’s good to replace your sunscreen often it you have any doubts about its effectiveness.
If you need some inspiration for feeding your crew,
here’s some ideas for this new week:
To me, “quick” dinner ideas doesn’t necessarily mean a meal you can throw together in five minutes. To me, the quick part comes before dinner time by:
- having a plan for this week’s dinners
- having the ingredients on hand–(a.k.a. a trip to the grocery)
That is the biggest hurdle to jump in having a quick dinner. Once you do that, for the most part you are set!
For those nights however, that you literally may have minutes to spare, plan a few super simple dinner ideas:
- light all beef kosher hot dogs (nitrate free if you can find them)
- pasta
- scrambled eggs
- frozen veggie burgers
- burritos with whatever fillings I have on hand
- frozen chicken, veggie and pasta “dinner in a bag” from the freezer section of the grocery
- a crockpot meal that you started in the morning and is ready at dinner time
- keep raw veggies and fruits on hand to add to a less than ideal dinner

Okie doke, on to this week’s quick dinner ideas:
Hashbrown Potato Casserole with Ham
Grocery list: Hashbrowns, cream of chicken soup, Cheddar cheese, french fried onions, sour cream and ham
Grilled Reuben Sandwich
Grocery list: Rye bread, corned beef, Swiss cheese, sauerkraut, Thousand Island dressing and butter
Spaghetti
Grocery list: Pasta, pasta sauce, ground beef and salad ingredients
Baked Chicken & Spinach Egg Rolls
Grocery list: Egg roll wraps, chicken, black beans, spinach, corn, green chilies, green onions and cilantro
Chicken Cordon Bleu Crescent Rolls
Grocery list: Crescent rolls, chicken slices, ham slices and Swiss cheese
Cobb Salad
Grocery list: Romaine lettuce, grape tomatoes, chicken or turkey, avocado, bacon, blue cheese and dressing
